so I roasted a chicken today.... stuffed w/
lime, jalepeno peppers and basil


the flavor was amazing.


When we were done eating, I cleaned the carcas and made a soup stock. I'm having homemade pho tonight. :bounce:

1. have you ever stuffed a chicken with oranges?
MrsCoffee does, and it's unreal how good it is. oranges, garlic and some herb which escapes me at the moment (probably basil, but don't quote me).

5. the "Platonic Essence of Roast Chicken" at least
according to the pretentious TV show 'Gourmet's Diary of a Foodie" salt and pepper the cavity, salt & pepper the skin, slap a little butter on the skin & bake it at 350 for 45min -1 hr. remove from oven let stand, stuff cavity with water cress & serve. The Platonic Essence of Roast Chicken.

I pass this along in hopes you have as much fun as I have ridiculing the pretentiousness as I have

your chicken sounds much more appealing.
