what's for dinner?
I defrosted one of my mini-meatloaves.... made a brown gravy. I had leftover rice pilaf and steamed veggies (carrots and broccoli) from Saturday.

The mini-meatloaf defrosted and re-heated VERY well. (It's a good thing, there's still 2 in the freezer.)

what are you having?

2. ground turkey enchilada casserole, salad, guacamole & chips
brown 1 lb meat
add chopped onion and chopped red & green pepper, saute until limp
add taco seasoning and diced tomatoes
add some water if needed
simmer on low heat for 20 minutes
set aside

lightly brown 16 corn tortillas in iron skillet use small amount of oil
don't fry until crisp

pour a small amount of enchilada sauce in the bottom of a 9" x 13" casserole dish
line bottom of dish with 8 tortillas, they will over lap
add the meat mixture evenly into dish
top with the remaining tortillas
pour enchilada sauce to cover the top
top with a generous amount of shredded cheese

bake at 325* for 20 minutes

serve with a dab of sour cream, garnish with fresh chopped cilantro and diced scallions (green onion)

Serves 6-8

I make homemade enchilada sauce in big batches and freeze in portions. It is so much better than the canned variety. The garden is producing copious amounts of peppers and tomatoes for us this year. It is wonderful to have all the fresh herbs and veggies to cook with and 100% organic too!
