When time and/or money is short and you don't want to eat out of a box
what do you make? (Post recipes if you can...)

I have a couple of stand-bys... such as turning almost any leftover into an omlet, or making hash.

Of course, leftovers often lend themselves to really good soup.

I can make a pretty good pasta toss w/ canned diced tomatoes, olive oil, garlic and basil.



(ok.. the box statement is going to elicit some comments, but I think you know what I mean--I'm trying to avoid the boxed mac & cheese thing, and the ramen thing, and the Banquet frozen dinner thing...)

PB &J, Mac 'n Cheese are all good
Dollar General's Rice a Roni is 50 cents a box and is very filling too.

but yes, I break my spaghetti before I cook it. Not just in half, but into thirds.

Peanut butter toast, if I want something hearty. Nutella if I want dessert. Butter and jam, if I don't care. Plain, if I'm lazy.

7. Pancakes or french toast, with apples slices on the side.
A big salad. Rice always works at our house - we love rice with any kind of side dish like cut up fruit or veggies. Grilled cheese is a big one for us too. I will admit that sometimes dinner is a smoothie and granola bars if we are in a huge hurry and need dinner to go.

12. You can do alot to spruce up basic cheese +crackers
I usually melt the cheese on the crackers in the microwave, then put some sour cream & salsa on it. It's delicious.

13.  garbanzo beans
add maybe a little bit of onion, cuke or tomato and some spices to taste. Or make a soup out of it with some veggie broth, add veggies and spices. For variety you can puree some of the beans to make it thick. Or toss drained garbanzos into the blender with olive oil and spices to make cheap home-made hummus and serve on a bagel, pita or perhaps as a dip for fresh veg. I loves me the garbanzos.
