I love Chef Ramsey - the more pissed off the better....but dear god how the hell could he stay in that place with all those frickin roaches....you would think the health department would shut that place down.
Am I a naive Minnesotan?? Is New York too damn busy and big to have regular inspections of restaurants? Thank god its too damn cold for roaches up here

I worked in food service for several years in my youth, mostly in two large restaurants and the rule of the day was clean, clean, clean! At one of the place, they would clean after closing, and the morning crew would clean when they came in even though nothing had been touched since closing. I become pretty close to the owner and asked why he opened an hour earlier than most places to clean what the night crew had already cleaned and he told me "poisoning one customer would cost more than paying everyone here for an extra hour for years on end." Smart guy.

I actually just read an article that Ramsey wrote on growing up with an abusive dad. (I forget where it was posted though.) Really sad.

It's amazing- the restaurant industry is one of the only ones around where you don't need any licensing to get into the business. Just money.
A guy buys a place called "Dylans " and converts it to Indian, Irish and American cuisine? WTF was Mohammed thinking?
In my neck of the woods, we have ratings cards that you must display in your window. I know many people who won't go in unless there's an "A" card in the window, which is obtainable by following basic food safety. They have "B" ,"C" and "D" as well. Once on one trip to the Pantry, a downtown LA landmark, I glancd at the card on my way in, and it was a "C"! And this was while the owner was mayor of LA! We moved down the street to the Jonathan

does a review every Friday with restaurants that were inspected recently and what their scores were. They've been doing it so long now, they have histories built up on some places so you can see the performance of the shop over a time period. And man, if they get below a certain grade, I think 90, they have to take a food safety course.
