tonight we're making homemade chicken soup.

months ago, bi-baby hacked up a whoLe chicken and boiLed it down with onions, ceLery and carrots to make stock... which was then frozen in a bunch of tupperware.

so, our soup, which is now simmering, consists of the foLLowing:

chicken stock
1 pound of pan fried chicken breasts in oLive oiL and chicken spice
1 Large, m-f'er carrot
1 fairLy Large, m-f'er shaLLot
2 Large staLks of ceLery
1 orange beLL pepper sLiced into smaLL strips
4 cLoves of thinLy sLiced garLic

and spiced to taste with saLt, pepper, cumin, and hot paprika.

so what are you having?

7. Reheating those damn enchiladas
that I made Wednesday. I used shredded beef and sharp cheddar with some purple onion. But man the red sauce is HOT. HOT, I tell you. It takes a mountain of sour cream just to eat them. And I have some rice and black beans from Zaterans to go with it. I might take it all down to my mom's house and see if my brothers will finish it for me. Lord oh dear.

22. Jon used shell steak.
Threw in a jar of Ragu (omg...I feel a flamewar being born) with mushrooms and onions, some oregano and garlic salt, cooked for 6 hours, and voila. So easy I think I couldn't have even messed it up. I'm the dishwasher, fwi. ;)

26. He cut up the meat into large chunks before he browned it.
And he only browned the meat for about a minute on both sides.

I've never had this before and the red sauce was yummy, especially with the peas and mashed potatoes.

The varsity and JV cross country runners in the house have had an exhausting weekend and will be ready for this, one of their favorite meals. Green beans, honey crisp apples, blueberry muffins. Homework and a reasonable bedtime. Wash the uniforms, pack the lunches...a woman's work is never done.

18. I just requested my Mom's Chicken and Dumplings recipe!!
She has ALS, aka Lou Gehrig's disease, so I requested her chicken and dumplings recipe, along with those for macaroni salad with chicken, deviled eggs, spaghetti sauce with 3 kinds of meat, scalloped potatoes...I'm thinking of more to get for the future...

21. When my brother and SIL got married,
my mom wrote out all of my brother's favorite mom-cooked meal recipes on index cards and gave them to my SIL. They live clear on the other side of the country, so he can't have her home-cooked meals but once or twice a year.

It was nice.

25. I passed out at about 3pm, so the hubster ordered pizza.

He knew better than to wake me up. The primary reason I was tired was that he woke me up in the middle of the night, making weird whistling sounds in his sleep. I had to go sleep on the couch, so I've been tired and my back hurts. Also, we went to the Down Syndrome Buddy Walk, and I had to chase Jack around a big convention center, because he was on a MISSION to "get" a guy in a stuffed dog suit.

We also had mashed potatoes (mashed with butter, sour cream, milk, salt, pepper and garlic, spooned into a casserole dish and topped with more butter and paprika and baked until hot throughout), green and wax beans, and toasted homemade bread.

Coffee is brewing now to have with dessert: warm gingerbread topped with homemade hard sauce.

This was definitely NOT a low-cal meal!
