ROAST PORK LOIN WITH APPLE TOPPING
2 tbsp. flour 1 1/2 tsp. salt 1 tsp. dry mustard 1 tsp. caraway seeds 1/2 tsp. sugar 1/4 tsp. black pepper 1/4 tsp. ground sage 4-5 lb. pork loin roast
Mix together flour, salt, mustard, caraway seeds, sugar, pepper and sage. Rub mixture over surface of pork, set fat side up in roasting pan. Bake for 1 1/2 hours.
TOPPING:
1 1/2 c. applesauce or minced apple 1/2 c. brown sugar 1/2 c. brown sugar 1/4 tsp. cinnamon 1/4 tsp. mace 1/4 tsp. salt
Mix all ingredients. Spread over top of roast. Bake 1 hour longer adding water to bottom of pan if necessary. Temperature 325 degrees for 1 1/2 hours, then 1 hour more.

My fiance (who is slumbering on the coach with the dog at the moment, lol) has volunteered to create some cupcakes later, but now I don't know what to do for a side...
I was figuring cutting up the potatoes, mixing them in some EVOO and salt n pepper, then letting them bake in the oven for about 45 minutes.
Any ideas?
