1. Same here!
I did a simple brine of 6qts of hot water, a pound of kosher salt, a pound of brown sugar, and plenty of ice to cool it down. The turkey sat in the brine for about 12 hours and came out perfectly (a new digital probe thermometer made sure that the turkey was done to the right temp).

I wouldn't hesitate to do it again, and in fact I will very soon. I have a turkey breast in the freezer that will definitely be brined before I roast it.

4. Once you've had Brined
there is no other kind.

Been doing it that way for the last 12 years. I wouldn't even bother to cook a Turkey that hasn't been brined. We had Turkey / first illegal immigrant day at the Grand kids. They didn't brine and their Turkey was dry and tasteless. Fortunately, they had a ham also. Since turning over the baster to the grands, we always have our turkey the next day cause I love the smells, the process and, most of all the leftovers. We call the day "Thanks a lot." What a difference! Mine, of course, was to die for!

Here is a link to the recipe I have used for the last 12 years, not because I don't want to try something else but because the family insists (for 11 years in a row no less) that I do it this way. Warning, if you try this, you may never be allowed to try anything else.

2. Ours came out good, too.
The dog let hubby borrow his food bin to hold the turkey and the rest of the stuff.

3. The dog was probably thinkin it had hit the jackpot when a turkey landed in its food bin!
I think my dog would have some sort of slobber orgasm at the sight of a turkey going into his food barrel!

5. if you also use an oven roasting bag...
...the turkey just falls off the bone. Never saw anything like the results from brining + oven bag. It's as good as the very old method of using a heavy enamel roasting pan with a domed lid and basting every half hour.
