I need some vegetarian crockpot recipes
I got a crockpot for christmas, and I've made all sorts of yummy dishes in it. But the boyfriend is getting jealous. He's a veg.

What can I make for him? The crockpot seems perfect for meat, but what are some good veggie dishes?

8. Vegetable stew is a good in a crockpot
i usually put in chicken stock but you can use water or veggie stock.

recipe isn't exact...

4-5 potatoes ( i like new or golden)
half a bag of carrots
3-4 stalks of celery
2 medium onions
a few cloves of garlic
1 can diced tomatoes
1 can stewed tomatoes
1 package mushrooms
1 tsp thyme
1-2 tsp salt (start with 1 and taste it, add more if necessary, if you use store-bought stock you might not need even 1)
0.5-1 tsp pepper
1-2 bay leaves

-chop everything up and put it in the crock (hope you have a big one :) )
-add the stock and/or water until it just below the veggies
-add seasonings

cook all day on low

serve on fresh cornbread

9. A few thoughts:
1. Any crockpot dish you make with chicken, just try substituting seitan. You might need to add a little more liquid unless it's the kind that comes in it's own.

2. Any soup recipe should come out at least as good in the crockpot as it does on the stove. If you need a few, try vegweb.com. They have about a skillion user-submitted recipes, and they're starred and have comments so it's easy to tell which ones are good or need a little modification. Bean and potato based soups both benefit from long, slow simmering, and should be very nice.

3. There's a cookbook called Fresh from the Vegetarian Slow Cooker. I haven't got around to buying it yet, but a few people whose opinions on food and cookbooks I trust tell me that it's very good. You might want to give that a shot.
