Tonight's Iron Chef experience in my kitchen |

What do we have in the kitchen tonight? Well, not too much!
If one saw a previous thread on my headaches, I'm also not feeling all that well, so the fact that this turned out tasting good was a miracle.
My wife gave it a 9.5 out of 10 so I'll share it.
One problem, I didn't measure anything exactly, so your experience may be different.
Ingredients:
Thinly sliced pork Corn starch Kosher salt Mushrooms (whatever you like) Sliced Chicken stock The juice of one orange Oyster sauce Soy sauce Duck sauce One onion chopped fine 2 cloves of garlic chopped fine Fresh ground pepper Olive oil 2 tablespoons butter
Coat the pork with the corn starch and salt. Brown in the olive oil and butter on both sides, remove.
Add onions and garlic to the same pan. Cook for like 2-3 minutes (my cast iron pan was hot so it didn't take long at all). Throw in mushrooms, cook for like 30 seconds while stirring.
Toss in OJ, deglaze, scraping the bottom of the pan. Soy sauce, about 1-2 tablespoons. Oyster sauce, about the same amount, chicken stock, about 1/2 to 3/4 of a cup. Turn heat up to high. Stir well to combine.
Fresh ground pepper, some salt. Let it reduce and thicken a bit. Add the duck sauce, about 1/4 cup. Stir to combine.
Add pork back to pan. Coat well with sauce and heat through again.
Remove meat to platter then spoon sauce over and serve with rice.
