Scrambled eggs with smoked salmon and chives


8 large eggs
4 tablespoons chopped fresh chives
3 tablespoons milk
5 tablespoons butter
1 large onion, chopped
6 ounces thinly sliced smoked salmon, cut into strips

Beat eggs, 2 tablespoons chives and milk in bowl to blend. Melt butter in heavy large skillet over medium heat. Add onion and sauté until golden, about 15 minutes. Add egg mixture. Cook until almost set, stirring occasionally, about 4 minutes. Mix in salmon. Cook until eggs are cooked through but still moist, about 1 minute longer. Season with salt and pepper. Transfer eggs to platter; sprinkle with remaining 2 tablespoons chives.

2. Not in that particular recipe...
...I've seen a lot of them with cream cheese included, so I've got to assume the cheese was left out of this one to ratchet down the "richness quotient."

Don't forget a bagel with cream cheese to go with that. I haven't had lox n eggs in a long time. Guess I'll have to make some.

6. Purchase salmon with care
DON'T settle for the very inferior aquaculture salmon farmed here on the East coast, buy Pacific (as in, Wild) and you won't be sorry. (What time should I show up for breakfast?)

Pacific salmon works equally well in Eggs Benedict too.

8. I do almost the same thing, but sprinkle a bit of dill on top before serving
YUMMY! Damn, no smoked salmon in the fridge. I know what I'm having for dinner tonight!
