45° here tonight. Homemade potato soup for dinner.

Redstone's thread reminded me that I'm hungry and that I've had a pot of homemade potato soup simmering all afternoon.

So, what's for dinner tonight, DU?

Creamy Potato Soup

8-10 large Charlotte potatoes, washed, peeled and diced
2.5 Knorr vegetable boullion cubes
1 medium white onion, peeled and diced, or 2 Tbsp. dried onion
Enough water to cover the potatoes
Diced ham or bacon (1 to 1.5 cups), browned. Vegetarians, eliminate this step.
1 pt (circa) half-and-half cream or 1 pt unsweetened soy milk (If you use soy milk, you probably will need the thickening mixture below)
If needed for thickness: 2 tsp. cornstarch mixed into 1/4 cup cold milk (1%, skim or unsweetened soy work just fine)

Instructions: Wash, peel and dice the Charlotte potatoes and place in a soup pot, along with 2.5 Knorr (or other vegetable boullion) cubes and peeled, diced, white onion. Cover with water. Boil uncovered at medium high until the potatoes become somewhat mushy (less, if you like chunky potatoes in your soup) for an hour and then reduce to medium-low.

While the potatoes are boiling, brown 1 to 1.5 cups of diced ham or bacon, or none at all if you're vegetarian. Set aside.

When the potatoes look to be about the right texture for you, add 1 pint of half-and-half cream and the browned ham or bacon. If the soup looks a bit thin, combine 2 tsp. cornstarch into 1/4 cold milk or unsweetened soy milk, mixing well, and add to the soup.

Reduce heat to low and simmer, uncovered.

Taste frequently. :P When it tastes done, pop four baguettes into the oven for browning. Garnish with crispy, french-fried onions and serve with fresh green salad and a nice chianti. :)

2. What time is dinner being served?
Potato soup is my very favourite! I add chopped parsley to mine and a hint of garlic. It's very much like your recipe.

mmmm...mmmm Was just talking about making a batch yesterday and freezing in individual containers. We just bought a new upright freezer and anxious to fill it up. :)

it's 31 here, and was very snowy last night. so soup seemed in order.

Somewhere in the mountains with goats.
:-)

Tonight shrimp (right off the boat and into the freezer) sauteed in butter and olive oil with garlic and parsley. Served over fried grits patties (an Emeril recipe Miz t. has been wanting to try).
With Hollandaise.
And a salad.
Maybe some bread?

13. Ahhhh...potato soup...
...yum... :9 I can't do it anymore with the diabetes I don't think... :(

No more corn chowder in breadbowls either... :(

My blood sugar level was 360 today when I checked it on the meter... :cry:

14. That sounds absolutely fantastic, Miss Heidi!
I freaking LOVE potato soup too and that recipe sounds pretty easy! I wish I were there to have some with you! I'll have to save this thread someplace so when I get home in a couple of weeks I can try it out!
