I just made a fabulous chicken mushroom dish |

It's one of the few things I can cook well.
Brown up some chicken, saute onion and a little garlic, throw it back in the pot with some chicken stock, white wine, tomatoes, a bay leaf, and some thyme. Bake covered 30 minutes then add mushrooms and bake uncovered another 20 minutes.
OMG. This makes me think maybe I will finally learn to cook. Bury me in it.

Oooh, that sounds yummy!
And not too difficult!
Do you use a cut up whole chicken, or something smaller?
We like chicken, so I am always looking for new recipes that aren't too hard!
I don't think you will learn to cook...
I think you already know how!

The recipe calls for "3 lbs chicken pieces." I used boneless skinless chicken breasts and cut them into chunks. I've tried this both ways and like what I did best.
Wonder how it would be for breakfast?
