Is there a better way to prepare noodles?
You know how you put them in boiling water, and they go from small'n'crunchy to big'n'mushy, right?

How about putting them into boiling wine instead?

1. You need to shock them with cold water a few times in midboil.

2. I know they go to big'n'mushy if you leave em in too long. But if you take 'em out
while a bit undercooked and sauce them (depending on the sauce) they'll continue to cook in their own heat.

I almost always pull the pasta right out of the boiling water and plunk it into the pan with the sauce, cook for another minutes in the sauce and done.

3. yep, that's called drunken pasta
one bottle of wine, and then as much water as you need to fill the pan.

Al dente, meaning "to the tooth."

The noodle still has to be slightly chewy in the center and not completely cooked through.

6. Try cooking them in chicken broth/vegetable broth, etc.
and don't over cook them. Yuck. I hate when they are mushy. I always scoop one out after a few minutes and taste test them to make sure they don't cook too long. I like them with butter, salt, pepper, and parmesan cheese!! My hubby calls me the noodle queen cuz I love noodles of any kind.
