I just ate an entire pound of stir-fried tofu for lunch!
sauteed with diced red onion, chopped garlic, fresh chopped ginger, a dash of lo-sodium soy sauce, a teaspoon of peanut sauce and a teaspoon of hot chili oil.

About 40 grams of protein, 350 calories, 10 grams of carbs

:9 Yummy! I'm totally stuffed. A great, quick and easy lunch.

11. Thanks for asking, Peggy. The ride was awesome!
started out a big cold b/c of the fog...but it quickly burned off and turned into a gorgeous day. We had a bit of a headwind at around mile 60 or so, but it turned into a nice tailwind coming down Foxen Canyon Road. The hills were lush and verdant from all the rains. Soooo beautiful!! I had a personal best of my fastest downhill speed ever: 48.5 mph!! Whatta rush!! :bounce: 7 1/2 hrs of saddle time, with 5,000 ft of climbing. Not too shabby. It made a huge difference staying right in the village of Solvang this year, as opposed to what we did last year, which was schlep in from Santa Maria b/c it was the only place left with rooms. We were able to get on the road by 6:20am and we were done by 3:40pm. This year, we played it smart and made hotel resos for next year's ride before we even left town. :thumbsup:

I haven't uploaded my pics yet, but I will eventually and maybe I'll post a few of them. I took a lot of pics while I was riding, due to the convenience factor of a cool-o velcro bag that straps on to the top tube and handle bar of my bike and that the ride organizers gave away as a free goodie. It fits my camera perfectly and I don't have to carry it in my back jersey pocket anymore.

I hope your friend's hubby had as much fun as we did on the ride! It's a very successful annual event.
