2. Fried squash

A cholesterol nightmare but a gourmand's delight

Fry bacon, after frying, drain all but a tablespoon of the fat.

Squash sliced thick (about 1/2 inch) and one thinly sliced onion, and optional green and red pepper, also thinly sliced.

Saute the squash, onion, and pepper in the pan...till just tender

Crumble the fried bacon and toss in the sauteed veggie mix...

I don't use salt but a little black or white pepper works as well, or any type of seasoning...
