Soup is always good with gloomy weather. Pea, minestrone or tomato with a French bread sandwich. Ham and cheese or roast beef if you eat meat. Grilled cheese or meatless burgers if you don’t.
If you like minestrone, I can tell you something my husband loves. The soup with an antipasto platter, you know, olives, peppers, bruchetta with pamersan and chopped basil and tomato. Then pasta with red sauce, he likes the large fusilli and I add mushrooms.
Oh and a bottle of Luzon Verde.

I just mopped my way our of my kitchen so it'll be a while before I raid the freezer. But I think it'll be chicken breasts. :)

One of my favorite meals of all time is chicken breasts baked in a mixture of the soup and the cream. I season the chicken breasts with salt, garlic salt and paprika, pour the soup-cream mixture over it and bake, 350 degrees, uncovered. The only thing that you're not likely to have on hand is the heavy cream and it does make a difference. I like it with rice. :9

Was in Peg Bracken's "I Hate to Cook Book," LOL. It was called "Saturday Chicken" and she said that the heavy cream made all the difference. She calls for cream of mushroom soup, but I've recently made it with cream of chicken, since my SO hates mushrooms, and I like that even better. It calls for 8 oz. of cream and one can of soup, but I usually double it, since the "gravy" that it makes, over rice, is just to die for, all by itself... I remember the seasonings, salt, garlic salt and paprika, and you can use any pieces of chicken, but the boneless is easiest. I cook it for around 30 minutes, depending, just keep peeking at it... :9 :hi:

I cheated. I got the piece real cheap is the only reason I bought it.
I ended up slicing it very thin and making sandwiches :D

I'm not that versatile with meat, but used to make this successfully for my Dad. Just season and broil on both sides to desired doneness. ingredients, temps, etc. And I particularly like "Food 911," get a lot of useful information from that show. I always learn something from The Food Network, the actual cooking shows, anyway, whether or not I'm interested in the recipe that they're making. Kind of like DU, LOL, where I learn something new and useful everyday. :hi:
on edit: One thing that I especially appreciate about The Food Network site is the user reviews. I always check those out before I make any recipe that I find there. If everybody who actually made it says it needs garlic, or less liquid, etc., I can be pretty sure that it does... ;)

And I made it last night. Repeats tonight. Use refrigerated croissant dough for crust. Bag of frozen mixed veg, can of cream of chicken soup, and one of cream of mushroom, roast chicken from the deli dept.
Easy, good, quick, cheaper, and more nutricious than frozen chicken pot pie.

I need to use up some leftovers, and that's what I'd like. But I also made spaghetti meat sauce, and CH won't eat anything else, as long as we still have that...:shrug:
One really easy meal is to use jarred vodka tomato cream sauce and cook up your favorite pasta. I've made it from scratch, but the jarred sauce is almost as good, so I usually keep some on hand. You can broil or bake boneless chicken breasts and serve them sliced on top, if you like. I bake the chicken in a buttered dish, seasoned with salt, garlic salt and paprika. Serve the pasta with bread or a salad. :D
Another easy last-minute meal is chili, just a pound of ground beef, turkey or chicken, canned tomatoes, beans and one of those envelope seasoning packets. I serve it over some rice with cheese sprinkled on top... If you don't eat meat, "granburger" works just as well...:-)

6 chicken breasts cut into 1.5 inch squares 3 chopped garlic cloves with the centre cut out and discarded 1 tsp ginger 2 cups chicken broth flour & pepper 1 cup sour cream 1.5 Tbsp curry 1/4 cup butter
Divide the butter into two. I large sauce pan melt butter and add curry to cook it a bit. Add 2 cups chicken broth.
Put flour & some pepper in a bag and coat the chicken chunks with flour. Add rest of butter to a frying pan. Brown chicken and remove. Add onions, garlic to frying pan. Saute until clear.
Add ginger to brother. Also add chicken and onions. Scald sour cream and add to large saucepan. Cook for 40 minutes or until the chicken is just tender.
Serve over rice.
