Most Americans (or, as NOLA blogerati sometimes refer to it, "the country to our north -- and I don't mean Canada") do indeed seem unwilling to accept not only beignets, but brass band music, go-cups, stuff thrown from parade floats, and so forth as an integral part of our national culture. Hence, the shameful, ostrich-like response* to Katrina.
