Spinach and Bacon Quiche

Episode: Garden Party

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

...my favorite cook book, my stand-by, is "The Good Housekeeping Illustrated Cookbook" (The Zoe Coulson 1980 version, not the later edition).

Her recipe for the classic Quiche Lorraine calls for the pastry, 1 tablespoon of butter, 12 bacon slices, 4 eggs, 2 cups heavy or whipping cream, 3/4 teaspoon salt, 1/8 teaspoon ground nutmeg, and 1/4 cup shredded Swiss Cheese.

For the mushroom variant you omit the bacon and heat 1/4 cup butter or margarine in a heavy skillet and saute 1/2 pound of mushrooms and 2 tablespoons minced green onion, seasoned with 1/4 teaspoon salt and 1/8 teaspoon pepper over medium-high heat for 5 minutes.

I once made her recipe for banana pudding, and it was the best I've had:

Not Yo Mama's Banana Pudding

2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

I need to make it again some time :9

11. What amazes me is that she hasn't died of a heart attack.
Don't get me wrong, I don't want to see that, but with all the high fat foods she makes, you have to wonder. I'm betting she doesn't eat a lot of the stuff she cooks.

...that you can pick up a magazine and find that the cover stories include Paula Deen recipes (with, they fail to mention, the attendant grams of saturated fat)...and sure-fire tips for losing weight. :eyes:

The fix for this is to replace the heavy cream w/lower-fat milk, and bacon with ham. Still tasty and not nearly as much fat.

I make a similar quiche recipe but that amount of ingredients make two quiches for us. I substitute fat free sour cream for the heavy cream, add some minced onion, sauteed until translucent, and vary the kind of cheese - sharp cheddar is great, Italian or Mexican cheese mixtures are really interesting.

Also substitute shrimp (crab or scallops), mushrooms, cooked chicken or turkey, sometimes sausage. About a cup or so, not a pound!

I swear I can gain weight just watching Paula Deen cook - unless I laugh it off at her jokes or her over the top recipes.
