...I wonder what that same lady would make of the German or British parts of my heritage? She'd probably have the same reaction. So, according to her, a Scots-Irish/German/English/tiny-sliver-of-French person such as myself has no ethnic identity.
As a solution, I would refer this good woman to the dictionary. To encyclopedias and, if possible, to some general history books. It's really quite simple.
Ignorance offends me as much as racism and prejudice do. Oh, wait! What is the root of racism and prejudice? Exactly!

lived in Ireland for a few hundred years, then got tired of being pawns of the English, so they moved to the US. Well, some of them are still there, but they're just plain Ulstermen. :P
But we're a unique breed. :D

When listing off my various ethnic backgrounds (that I know of... I don't know a huge chunk of my european side. :) ), people will tell me that I can't be a quarter jewish because it isn't an ethnicity. :banghead:

continue to try to tell me that I can be a Jew and still believe in Jesus. While I suppose that's true in the ethnic sense, it just ain't in the religious sense. Their inability to understand that cultural and religious Jewish belonging can go hand-in-hand is another weird thing.

But they're still descendant from jews. And if they'd stayed in Poland for another decade or two, there mighta been some problems.

When a religious Jew says that there is no Jewish ethnicity and that the community of Jews consists only of those who adhere to the Jewish religion, they make some sense to me. After all, the faith existed long before more modern notions of nationality. On the other hand, people who deny their ethnicity so they can assimilate are doing it for personal reasons that I just don't understand.

and thus she's correct. However, too many people don't know the difference for it to matter much.
To be technical, your ethnicity would be Celtic (probably).
Same as mine (descended from Scottish Catholics from the highlands), Gerry Adams (leader of Sinn Féin, theoretically a Marxist, but the son of Irish-Catholics), Rev. Ian Paisley (filthy Ulsterman that he is), Mary Shelley (descended from Scottish lowland presbyterian stock), Winston Churchill (about as British as you can get), Jim Bakker (born in the US South to parents of Scots-Irish heritage), The Queen of England, most Australians, a large percentage of Canadians and about 2/3 the population of the French province of Normandy. If you're ancestors were in almost any way inter-married with the British, you're almost certainly at least partially Celtic.
A genetic survey done last year revealed that among the British, genetic stock of other common British ethnicities (Pictish, Anglo, Saxon, Norman, I'm forgetting several) was being lost out of the population. That's how common Celtic ancestry has become. We've conquered much of the English-speaking world through intermarriage and fecundity.

Of course, once I described myself as Scots-Irish to one of my College buddies' Irish Immigrant, South Side of Chicago Father and he gave me an earful of nasty insults, then we all got drunk and then I was OK.......
