I'm Eating Hummus For The First Time
it's...interesting, kinda bland, kind of good. i bought peta chips and peta bread. roasted garlic hummus, classic, sun dried tomato and forty spices. i may have just found an alternative to nachos.

anyway--just wanted to share this breakthrough with DU

1. Hummus quality depends on the brand, I find...or,
you can just make your own. I LOVE hummus. On pita, in sandwiches, on crackers...YUM :9

12. Once I found out how easy it is (and how much CHEAPER) to make my own...
...my food processor gets used much, much more often now. :9

39. Yep, season it the way YOU like it and it freezes well!
I usually cook up 3-5 lbs of the chick peas, run them through in batches with lemon and a bit of olive oil, put in a big ol stainless steal bowl to season, mix, then fill pint containers and off to the freezer!

Great summer day lunch fare. A small container with some whole wheat crackers, a piece of fruit and some ice in the little ice chest and Havocdad has a satisfying lunch that doesn't overheat him when he is out in the field. No mayo sandwiches to worry about poisoning him!

Makes good wraps with a handful of fresh spinach.

17. Yup.
Some hummus is as bland as paste made from styofoam, while some hummus is too good for words.

2. Make your own.
It's easy with canned chickpeas and you can adjust the balance of flavors to suit your taste. I like a humus with more garlic and lemon flavors than can be found in most supermarket varieties.
Here's a link to a simple recipe:

I love to eat humus with fresh veggies, broccoli, celery, carrots, and peppers.

15. Canned chickpeas?
:puke: I got totally spoiled by the fresh stuff my Turkische Mama makes. She cooks all day, every day. I do the dried beans (which keep very well), soak, remove hulls. Tried it once with canned and the taste wasn't there...

16. Hey, I said EASY not best.
The brand of canned chickpeas makes a huge difference too. Some are terrible, others are close to home-cooked dried beans.

Please stop barfing hummus.}(

33. The thing is, these ME and NA Mamas
that abound in these parts, (when one seeks out the connexions that gain access), ;-) spoil your palate. How ya gonna keep 'em down on the farm, after they've seen Paree???

35. I know... I have a connection for some hummus made by an Eastern Turkish woman.
She also makes really good foul and mujadhera. I love the food of that region.
I make hummus, baba g, and taboulleh all summer long. :9

36. New tenants in my building had a party that I crashed
Had greeted hubby previously in the hallway. It was Manu's b'day. Banged on the door and told them I was gonna complain about the noise unless they allowed me to make some noise with them too! Her Syrian/German friend's uncle had whipped up this batch of baba g... Lawdy, GC, I thought I'd died and gone to gourmet land!!! If for no other reason folks need to reach out beyond their borders. It's the FOOD, baby, IT'S THE FOOD! Met some wonderful yung'uns that night.

I could have eaten the entire buffet set-up! I'm sure it was fresh, no canned shit.

And this from a person who hated Hummus. :hi:

9. I go through phases where I practically live off of hummus and pita bread
They always have it at the dining halls, and usually the hummus is pretty good, so sometimes when I'm in a hurry (or nothing else looks good) I'll just get some hummus and pita bread. :9 Good stuff. Enjoy! :hi:

11. It's pretty amazing as a sandwich spread...
with lots of crisp raw veggies on a wrap or in a pita. Lower cal than mayo, less overpowering than mustard; yet creamy and tangy.

18. My favorite is what I call
a green sandwich: hummus on whole wheat pita with thin slices of cuke, avocados, baby lettuces, alfalfa sprouts, and a little crumbled gorgonzola! :9

And we get to have them for lunch this week! :bounce:

20. Add a little olive oil to the hummus and it becomes out of this world. Eat it with
pita bread. Better yet.... add some sort of flavoured olive oil.

several different types.

I wasn't impressed. It kinda tasted like glorified bean dip.

You don't know until you try though.

30. Hummus? Isn't that the Palestinian political party in Gaza?
Oh .... never mind.

My wife makes the home-made variety, loads it full of garlic and lemon. Deeee-lish.

I think I first had it about 30 years ago.
