Really...I think they're bland and mealy. I almost never use them in any recognizable form; usually if I have a bag lying around I make hundreds of gnocchi and freeze them. If a recipe calls for them, I usually I substitute other root veggies (turnip or taro) or sweet potato depending on what would work best.
