Why the hell can't I peel a hard boiled egg?????
I am an idiot. How did I live these many years only to butcher hard boiled eggs? I'm having a cookout tomorrow. Hamburgers, hot dogs, sweet Italian sausages, pasta salad, potato salad...and I was making deviled eggs and the egg is coming off with the shell. Shit! I'm incompetent. That's all. I'm going to bed.

5. Are you peeling the shell from one spot?
Try cracking it then rolling it around in a dish towel... to crack it all over sort of. Might help.

12. After you boil the egg, take it from the boiling water and drop it in cold
water for ~30 seconds, then back into the hot for another 30. Take it out, let it cool, then peel it. Also, fresher eggs will be harder to peel, so use them when they're a few days old...

I follow these steps, and I get about a 50% good-peel rate! ;)

13. Are you standing on one leg?
You have to put all your weight on one leg when you crack the egg, or your body geometry will be off.

17. My body geometry has been off for a long, long time. But, in
frustration, I broke out a bottle of scotch and now I'd be really afraid to stand on one leg. I'd have more than the eggs to worry about!

20. Are you using a spoon to take the shell off?
Just use a regular sized spoon and slip it under the shell. The spoon conforms to the shape of the egg and the shell will come off in one or two big pieces.

reduce heat to medium for 10 minutes
immediately put eggs into cold water

The eggs will be easy to peel and the yolk will be bright yellow
Trust me, I hate the damn things, but I make excellent hardboiled eggs

that make the DU great.

Put the eggs in a pot and cover with cold water by 2 inches - You need to bring the eggs up to a boil from cold water on the stove. when water is boiling place a lid on the pan and then move to a cool burner and allow the eggs to sit in the boiled water for 15 to 20 minutes...

Now put the pot in the sink and turn the cold water on them - let the water run till the eggs are cool - now put the eggs in the refrigerator and allow them to chill - rap the egg on the counter and gently roll the shell until it is cracked all over, gently remove the shell - it will come right off. I promise. Also the egg yolk will not turn that weird green color but will be bright yellow.
