Ca-RIB-bean, because it's named after the Carib (emphasis on second syllable) Indians.
I usually use this pronunciation but I can't help but slip back to the other one at times, as when saying "Pirates of the Caribbean" (too many good memories of that Disneyland ride).

I always say "Car-I-be-an" unless I'm referring to the ride at Disneyland or the movie franchise; then I say "Car-i-BE-an"
