Blackjack question for the lounge pros

I watched "21" this weekend (excellent movie, BTW!!!!), and it got me wondering. Does anyone have any thoughts on the whole business of "card counting?" I didn't really have much idea how it worked until I saw the movie, with the +1, 0, -1 system. Does anyone have any ... ahem ... experience with this? Does it require an MIT math genius to do successfully? Perhaps you "know someone who knows someone who has done it."

Also, what's the deal with the "facial recognition software" they talk about in the movie?

1. It's much more involved than they implied in the film

But basically a high percentage of high cards left in the deck is an advantage to the player because the dealer must hit on 16.
