One squirt is enough for a whole family. I love that stuff. I'd put it on my cheerios if it didn't curdle the milk.

My wife and I bought a bottle at a farmer's market outside Pueblo a few years back. It makes Tabasco seem like colored water.

I like tobasco or choloula for every day hot sauce. I eat Louisiana hot sauce of eggs, fries, burgers and things that would ordinarily take ketchup. Crystal hot sauce is the only hot sauce for buffalo wings IMO.
I have some of that Pete's Insanity sauce too. That stuff is not fit for eating. That is the hottest stuff I have ever tasted.

I have each and every one of the ones mentioned in my pantry. I'd add Crystal, which is PERFECT for everyday , instead of salt for example.
Trader Joes makes one I just discovered after years of walking right by, it rocks.

The first taste is a sweet, spicey peach followed by mellow, rounded hellfire! Myt friends are fanatics and they all love it! I use about 20 habanero per batch. http://www.hotsauce.org/hot/south_texas_sunshine.html

I think I may start with fewer peppers than you, say five or six. I like heat, but I'm not a masochist.

The one with the caution label telling me to dilute with three parts water and one vinegar before using. I use one tablespoon, full strength to add heat to my sauces. Mmmm, it has a unique flavor, too. Now you have me thinking BBQ ribs or jerk pork.

It's a thai chili garlic paste with a rooster on the clear plastic squeeze bottle. It's a really sweet and tangy hot and you can put it on just about anything. Here's a review: http://www.taunton.com/finecooking/pages/c00089.asp

I ran across Marie Sharp's hot sauce while in Belize over Christmas. It's habenero sauce in a carrot base. Darned tasty! I brought Hot, Mild, and Green (hot) home with me. I keep them by my desk (where I eat most of my meals) and sprinkle them at will.
Yum!!!!!!!!

Not so hot as to overwhelm the flavor, and the new lime flavor stuff has to be one of the best tastes ever invented. Go ahead, call ne a sissy, but I don't wear frilly ladies' undergarments.

Cholula for Mexican. Sambal or Siracha for Asian. Tabasco is a great multipurpose sauce.
For the hotter stuff...
Dave (Dave's Insanity) makes wonderful sauces. Blair makes remarkable extracts, but you need to add flavor yourself.
