My wife worked for several of the largest chains in North America. You don't want to know what happens to food sent back, or food that replaces food sent back.

but no, we didn't spit in anyone's food or anything like that for just sending it back, or even being a general pain in the ass. In fact, only ONCE did I ever see food messed with, and considering the amount of abuse the server took and the fucking useless douchebag of a sexist pig general manager not doing ONE THING to remedy the situation, the treatment seemed fair, even if it wasn't "right".
I have seen people masturbating under the tables, I have seen people changing diapers ON THE TABLE and LEAVING IT THERE for us to clean up, I have seen every kind of bodily excretion left behind on the booth seats. But really, only once was anyone's food messed with. I would guarantee you that anyone who messed with food for no big reason (sending food back is routine) would be ratted out by a grossed out co worker pretty quickly. Remember, restaurant workers also eat at restaurants with the same good faith that their food will come out in good shape.
But yeah, it's ALWAYS a good idea to treat restaurant staff like human beings.
To answer the OP: servers have zero control over the quality of the food, and they are the ones getting the tips. If the food is really bad ask to see a supervisor to get the bad items comped, and tip WELL for having an accomodating server.

most of the time since I dine out alone a lot of the time. I realize I'm a single person taking up space at a table that could make them more money if more people were sitting there.
The service has to be really rotten for me to tip badly. If the food is bad, I tell the the wait person to tell the chef.

and the work is so minimal, I've never felt the need to tip. Plus, they get to spend their days/evenings around some of the nicest people. Oh, and the children! The delight of dozens of other people's delightful little children, I think some would do it for free.

almost 15 years, my advice is this.
1. when ever you have a problem, please tell the server, and if they can't fix it for you, ask for the manager. Most restaurants don't want a customer to leave unhappy. Give them a chance to fix whatever the problem was.
2. food bad/service good: tip the server according to service. They didn't (in most cases, but I have cooked and waited at the same time) make your food.
3. good food/bad service: again, tip accordingly.
15% is the average. Got kids? Leave a big mess? Tip better than the 15%. Same goes with large parties.
p.s.
if you can't afford to tip your server, you shouldn't be going out to eat. JMHO. OH, and please, Jesus Pamphlets don't count as tips.

I tell the waiter/waitress and if a manager-type person doesn't soon wander over to my table to make an inquiry, I usually ask for them next. Not the wait staff's fault. But if the service sucks, so does my tip. Even with the worst service, I've never not tipped. I've left a glaringly small amount to get my point across, but never stiffed anyone. I left a quarter for the one waitress that kept putting her hands on my boyfriend, and then sat down at our table with him when I went to the restroom, at ChiChi's when I was about 20. That wasn't so cool with me. Now I'd leave a big pile of money for her to have TAKEN him if I knew then what I found out later about him. :rofl: Good thing I got smart and dumped him.

If you only get 15% with me, you're doing it very wrong.
My gentleman and I have tipped 50% when we had an awesome server. Hint: We are both thirsty people, please don't let our drinks go empty for more than five minutes, or you will not get the maximum we were willing to tip.

If you don't like the food, tell the manager.
Actually, the restaurant owners have no idea what kinds of tips the servers are making, so neglecting to tip sends a message to the server only--and that message is that the service was bad.
