3. IMHO chocolate pudding is not as good as a chocolate bar
or chocolate ice cream. Chocolate pudding is bland. Rice pudding is sweet and I love rice. :9

11. Recipie for Carmel Rice Pudding
This is what I make, in a crock pot.

3 cups cooked organic sweet short-grain white rice (other rice will work in a pinch, but this seems to do best -- sushi rice will work but it's not as sweet)
1 can sweetened condensed milk
1 can evaporated milk
1 tsp vanilla
Cinnamon and Sugar

After cooking the rice, put it in a crock pot (it's a good idea to go ahead and get the sides with some kind of nonstick spray, but it doesn't work well for me either way, have to scrub the crock.)

Put in the condensed milk and the evaporated milk. (If you want a stronger caramel flavor, puncture a small hole in the top of the condensed milk can, put it in a pot of boiling water with the hole in the top above the water line, and boil for 5 minutes first.)

Add the vanilla, stir it up good, and cook on low until the liquid is absorbed. It takes about 3-4 hours. I stir it, which is probably why I have to scrub the crock afterwords.

When it's done sprinkle the cinnamon and sugar on top.

Variations:

Add fruit -- raisins, dried cranberries, and dried apricots work well (not all together, but I've tried all three separately, put the fruit in before cooking).

Add about a half teaspooon of nutmeg and cinnamon to the main mixture and stir it in.

It's YUMMY. I am going to have to make some soon. Just make sure you don't get expired evaporated milk. I did once, didn't notice it was expired until I had opened the can and then immediately dumped it in the crock. The SMELL!

I ruined a good three cups of my organic short-grain sweet rice that way. *sniff*

I haven't had it in years. At the time, I didn't care much for it. I would kill for it right now.
