What is the purpose of the three celery sticks with the order of chicken wings? |

I think the celery, when dipped in blue cheese sauce, was supposed to cool your mouth off after the hot wings.
They used to be really hot. I haven't tasted a truly hot wing in a couple of decades...

Real "Buffalo Wings" are very spicy...the celery dipped in blue cheese helps put out the fire.
I went to college in Western NY -- I have eaten my fair share of wings!

It's not so bad when it's cooked and soft, and the flavor has diffused and mellowed a bit. But raw? Bitter, watery-crunchy, and tough. Who on earth ever decided that it would be a good idea to put that stuff into ones mouth?
