http://en.wikipedia.org/wiki/Government_cheese From what it sounds like, you might like the American cheese that comes in plastic wrapped slices? It melts well and is more like cheese than Velveeta. I loved Velveeta when I was a kid, but my mom said it wasn’t good for us. It made the best Mac n Cheese.

A staple when I was a poor college student! I remember making grilled government cheese sandwiches and watching this clear government liquid oozing out while they cooked...Yum yum! And don't forget the government powdered milk you could also get...perfect for government lattes! Those were the good old days!

I remember getting a big block of American cheese, the real stuff, not that pre-sliced and individually wrapped crap they sell nowadays.

I get it at the deli counter of the supermarket. It comes in big long blocks, and they slice it up. Maybe it's a regional thing, but I'd expect American cheese to be available across America.

I usually get Boarshead brand, but sometimes I'll get the store brand one. I think they both taste the same, but the wife disagrees.

I've also never seen "real" Kraft American cheese. The stuff that you buy to get sliced around here is all Boarshead, Land O'Lakes, and store brand stuff. The only Kraft American cheese is the pre-sliced plastic wrapped stuff.

What I was trying to get at was looking for a less expensive alternative than the deli counter stuff. Kraft used to sell 2lb boxes of real American that was way lower priced than the deli cheese.

I think Velveeta is a cheese product, which is even worse than cheese food in terms of actually being made with cheese.
American cheese must meet certain standards. Government American cheese definitely meets those standards because it is supervised and tested by the USDA.

They use different suppliers. I don't think that the big corporations participate but I could be wrong about that. I know a couple of brands that for sure are made by companies that have made government American cheese but I am not at liberty to disclose them. As another poster mentioned above, you can often buy this cheese in the deli case.
