Goes great with eggs. :9

Cholula isn't bad either; not too hot, but has a good flavor. Texas Pete is good for making Buffalo wings.

23. I used to be a Sriracha guy
but after a while it tasted too garlicy for me, so I switched to the blend listed below. It was the point where I'd draw a line of Sriracha on each bite of a burrito that I realized it wasn't enough.

I call it cock sauce, though. So much so that when I was at a restaurant with my sister-in-law, I just said "want to hand me some cock sauce, please" and got a very interesting look from her.

3. There is a green salsa at El Pollo Loco that is just awesome.
Their $1 CBR (cheese, bean & rice) burritos are like mana from heaven when topped with that green salsa. I think it's called avocado salsa, but I'm not totally sure. I just know it's almost good enough to drink out of the little cups straight! :P

Then, there's an authentic chain of Mexican fast food places around Vegas called Roberto's Taco Shop which has three varieties of extremely hot salsa available to put on their food. Red, green and orange. All three are loaded with chili pepper seeds and go great with their food, but if you overdo it even a little bit your mouth will be on FIRE!

As for store-bought hot sauces, it's very hard to find a brand which doesn't taste like salt and vinegar with a touch of heat added as an afterthought.

Anyone know of a good brand I should watch out for?

7. Oh Hell yeah, that shit is lethal!
Even I gotta go easy with that shit, and I have a seriously high tolerance for heat when it comes to food. First time I tried Dave's I put what I thought was a modest amount on a steak. Not quite modest enough.... I literally couldn't breathe for about 30 seconds. And I swear it gets hotter just sitting in the refrigerator. About the last 1/3 of that bottle had concentrated itself to the point where it was impossible to pour on food directly. I had to pour it into a big kettle of chili in order to use it up.

For my every day hot sauce though, I go with the good old Red Rooster bottle........

6. How about El Yucateco, Chile Habanero?
This is a hot sauce from Mexico and it is pretty darn good. It does have a vinegar taste, something we like. But it is thick and full of flavor as well as heat. Great on eggs and bean burritos.

Favorite hot recipe. http://www.internationalrecipes.net/find/Doro%20Wat%20with%20Berbere%20Sauce They go wussy on the hot peppers. The Berbere recipe I use makes 1 1/2 cups of the spice mixture, 1 1/4 was cayenne. You have to roast this mixture. DO IT OUTSIDE!! Trust me on this. It's like being maced.

Used to use the below in soups. One drop was enough to make it just right for my sweet bride. It's habanero extract. It's dangerous in the wrong hands, or on any hand.





Melinda's XXXXtra Reserve is very tasty. Good smoky flavor

For real insanity, go to a good Asian market and find an Indonesian product called sambal oelek (name of the sauce, not a brand name). Pure crushed Thai bird chilies with a little vinegar and salt. That stuff is rocket fuel.

Not served in the traditional manner but this image will give you an idea of the foods that got me into hot sauces. This is Eritrean food, similar to Ethiopian food. The bread is usually laid out flat and the stews and other consumables are ladled on top. You eat with your hands, using the spongy bread to hold the food.

I use Blair's "After Death" hot sauce. A nice mix of red and orange Habaneros, cayenne, smashed garlic, chipolte, pepper extract, lime juice, cilantro, and other herbs and spices.

The bottle comes with a skull.

Fire From the Mountain is great stuff. They make a bunch of hot- and barbecue sauces, but for me, the Smoked Habanero sauce is THE ONE.

But whatever your heat preference, the sauce is made with lots of care and love by old hippies (who are wonderful neighbors of mine), and I recommend it whole heartedly:

53. Ha! I'll take the food. The other: been there done that. It was fun, but
nothing can beat a dish of Baba Ganouj and some good delicate pita. A open face roast beef sandwich, mashed potatoes/gravy, and a side of green beans would be nice. A seafood chowder is not something I'd turn down. Some roasted veggies on a nice country bread, goat cheese and some nice green olive from a mild brine might be the ticket.
Steamed broccoli with lemon juice, oh be still my heart.

And they've got other brands of the stuff besides just Tabasco, you know, notably Crystal, which used to be made about a mile up the street from my NOLA home (since the Federal Flood, it has come from a town called Reserve a few miles upriver).
