(disclaimer) I come from a seriously midwestern-ish sensibility...
I would LOVE an apple pastry with cheese alongside. Cheese cuts the sweet nicely and balances the palate.
Of course, Carla is a bit intense, even strangely so. But I think I would love her dessert from tonight based on my own personal history. And yes, I melt cheese on top of apple pie for my dad, as he will eat it no other way. :-)
