So, what's your Thanksgiving menu? I haven't decided yet
what I'm going to make, and I'd like to eavesdrop on what everyone else is making and decide that way... if you have a favorite recipe, post that, too, if you're so inclined.

Thanks! It's just me and my husband this year, so it will be sort-of a vicarious holiday, as we have a project due the next day ... not much time off, but I would like to make a nice meal.

Turkey, my mom's sausage and cornbread stuffing, spuds, gravy, fresh cranberry sauce, peas with pearl onions, fresh rolls, candied yams (:puke: ) a relish tray with olives and pickles, wine - still and sparkling, pie - pumking and pecan, whipped cream. Oh and waldorf salad, almost fogot.

I'm exhausted just writing it.

yam mash with orange zest, butter, and a bit of orange marmalade

waldorf salad, classic (apples, celery, walnuts, golden raisins, mayo, lemon juice)

cranberry sauce

relish tray

roasted vegetables: parsnips, onions, brussels sprouts, rutabagas, beets, squash dribbled with olive oil, balsamic vinegar, fresh thyme sprigs

hot homemade dinner rolls

.....

pumpkin pie

sherry cake

cranberry flummery with cream



If we were having more people, I would add a couple of side dishes we love: a zucchini parmesan casserole, skillet-fried corn, etc. But there will just be eight of us.

Stuffed mushrooms

Quiches

Veggie lasagna

Meat lasagna

Sausage and peppers

Baked Ziti

Turkey

Cranberries

Stuffing

Green bean casserole

Yams

Mashed potatoes

Etc

She does a full Italian meal then a full Thanksgiving meal.

Friday, we're going to my mom's. They're having Turducken and lasagna.

I may have some friends over for stuffing - that's it. Or maybe I'll make this corn dish. Chances are though that everyone will be very busy and I won't do anything special, but just go to the pub later.

10. Oven roasted turkey (18.5 lbs) brined, sausage and celery stuffing, mashers, baked sweet potatoes
green bean casserole, pork and sauerkraut (this is a MD thing, I don't know why) corn and broccoli. Dessert will be a pumpkin trifle (I'm making) an apple pie from scratch (I'm making that too) cheesecake and carrot cake I am buying from the Amish Market. Oh, and I am NOT making cranberry sauce from scratch this year. It's too much bullshit, and I always have way too much left over. This year, I'm buying the can.

I will be happy to give you any recipe you want. Just ask. ;)

21. We're going with a dry rub instead of brining this year
It looks more convenient and is supposed give the same results. Instructions are to rub about 1/3 cup of kosher salt--with or without seasonings--onto the turkey about 16 hours before roasting. Rest the salted turkey uncovered in the roasting pan in the refrigerator. The idea is that you dry out the skin. Then, right before roasting, you rinse off the bird and proceed as you normally do.

I've never like the brine method, even though it gives good results,because of the necessity of keeping that big bucket of brine cold. This looks more doable.

28. It's kinda meh.
I like the gravy, the stuffing itself is good, but the tofurkey roast is just okay, I will say that the name's kind of a misnomer, it's wheat gluten based and has a dense, meaty texture, not the sort of softer, tofulike texture that the name might imply. On the other hand, the Tofurkey deli slices and sausages are awesome.

I like Celebration Roast better. Similar concept, better execution.

13. My coworker is bringing me food...
I volunteered to work the post-open (i.e. the third person in in the morning) to pre-close (the last non-closer to leave) because I hate Thanksgiving and it's doubletime. Work 12 hours and get paid for 24.

As to what she's bringing me? No idea. Pizza maybe.

We have "won" a turkey, though I'm primarily vegetarian. My husband will want some turkey, and I might make a cauliflower/potato casserole and some green veggie for myself. And of course, several kinds of pie. And maybe the Earl Grey cupcakes trof posted the recipe to in an earlier thread...

I have to call her today and make sure that she actually HAS everything she needs. She has a habit of volunteering for more than she can handle, and then being too stubborn/embarrassed to admit that she needs help.
