Sweet potato pie help please-

i baked the potatoes and scooped out the inside, these aren't orange, is that normal? They smell and taste like sweet potatoes though.

They might be a little less sweet than the yams and a touch starchier.

They aren't going to change color, though. Pale yellow, right?

edit: oh, pie! I missed your edit. Hm, that might be too starchy for pie.

5. Most people use yams for sweet potato pie.
I'm sure you can use what you have, but I don't think I've ever done it, so I don't know how it might need to be adjusted.

The color's different, sweet potatoes are drier, and I think slightly less sweet.

4. i got the from the bin marked sweet potato, i even asked the produce guy while i was there.
the yams were different looking, much more orange.

14. They are actually all different varieties of sweet potatoes
Old produce lady here. People call them yams but they are not true yams which don't grow in the US but are common in Africa, South America and parts of Asia.

There are several different varieties of sweet potatoes - the darker the color, the sweeter they tend to be. I'm not sure which one is most often used for pie.

9. Make pie filling per recipe but before pouring in pie shell, taste
for sweetness. Yellow meat sweet potatoes are not sweet like their orange sisters. If needed, add more sugar...a little at a time. Continue the taste test until you're satisfied. Shouldn't take much more sugar. Bake as usual...Yes, the color will be off but the pie should still be worth eating. If you're worried about color..a tiny amount of orange food coloring wouldn't hurt the pie.

10. done, i did end up adding a little bit more sugar, both shells are now filled and in the oven
what's done is done, hopefully they'll be good.
