Doesn't anybody make turkey hash?
When I was a kid we'd always have turkey hash the day after Thanksgiving. I always loved it much more than the turkey dinner itself. Here's what you do:

In a cast-iron frying pan, chop up some onion and celery,
fry it together with pieces of turkey,
globs of dressing **,
add a bit of leftover gravy
leftover cut up sweet potatoes,

Fry it hot and not for too terribly long.

Serve with leftover potatoes if you have any,
or
with leftover gravy if you should be so lucky.

(Our gravy made the tradidtional way did not make a huge bunch of gravy.)

**TURKEY DRESSING
croutons
onion
celery
egg
raisins and sometimes prunes too
poultry seasoning
salt & pepper
extra sage
butter


All these flavors together in one big black cast-iron frying pan were just TO DIE FOR.
