In the interest of watching my finances, I decided I should make my own (instead of paying $1.25 a pop to get some at Starbucks). Subbed almond extract in place of vanilla, and used a cup of walnuts. :woohoo:
If I'm feeling decadent when they finish their second round of baking, I'll dip them in dark chocolate when they cool. :9

It's a frugal way of pleasing everyone and having some fun making them :)
Here's a tip on the second baking, gleaned from many years of work: Don't lay them flat in the pan. Stand them on their flat bottom side and just bake for the full time without having to bother flipping them over halfway through. You can also get more onto the pan that way; just make sure there's about half an inch gap between them all.
I've found that the orange-almond flavor is the most popular of all the different ones I've made. There is even a savory type that's more like a hard cornbread biscotti and it's pretty good, too :)
