What is for dinnah, DU?
Tonight I am making greek stuffed and bacon wrapped chicken breasts (oshyposhy's awesome recipe), saffron rice and romaine lettuce salad.

I am also currently cooking a huge pot of chili (three meals worth) to be served tomorrow with cornbread. The other two meals will go into the huge freezer for a day when I do not have time or energy to do a big cooking thing.

2. Some kind of pork chunks cooked by husband (probably grilled)
salad (romaine plus spring greens) maybe some corn. Haven't decided on a starch but I am baking a cherry pie right now for desert. It's kind of a bribe since he's cooking AND working on my brakes today.

3. Just posted it in C&B.
I have some eggplant slices marinating in a balsamic/lemon vinaigrette and some Ain5 modified wheat/semolina bread sitting out to rise.

Gonna put slices of organic tomatoes that taste pretty summery on top of the eggplant with some feta and gorgonzola and shredded Italian cheeses and roast them in the vinaigrette.

Egg beaters and whole grain toast. Water to drink. Tasty, eh? I might have a cup of peppermint tea to add a little flavor.

12. Spaghetti with garlic, olive oil, butter, Parmesan, and fresh-ground black pepper.
In Italy, spaghetti with olive oil is considered comfort food, a "midnight snack."

This dish is a go-to meal for me. Here's a photo:
