but DC is very suspect. There seem to be a LOT of place around here that insist that mayo, lettuce and tomato are normal on a cheesesteak.

Yer basic regulation cheesesteak consists of
Bun Steak Wiz Onions
Sauteed 'shrooms and/or peppers are acceptable additions but not necessary
And it is OK to dump on some hot sauce after the sandwich has been handed to you.
Lettuce and tomato have no place on a proper cheesesteak, much less mayo. On a hoagie, such is permissible. NOT on a cheesesteak.
