I thought celibacy was being a virgin while abstinence was not doing it for some period.

Once you've done it you're never gonna be a virgin.
If you stop completely, even if you did it, you're celibate.
If you take a break, even for a couple 'a days you can say your "abstaining."

I want the local trees to take a vow of celibacy, rather than an abstinence pledge.
I don't think they'll do either. They'll just make their flowers and send out that nasty pollen like they do every year, the damned horticultural sluts that they are.
If they have to reproduce, they shouldn't do it in front of my nose and lungs. They should cover it up and grow tubers.

And to answer your question... I think sex with oneself is the same thing as sex and so it's only abstinence... whereas if you're celibate, you don't even have sex with yourself.

Yes, they both can mean abstention from sexual intercourse, but they have other meanings. Celibacy refers to being unmarried, chastity doesn't. Anyone can be chaste but only the unmarried can be celibate.
Abstinence, BTW, means:
1: voluntary forbearance especially from indulgence of an appetite or craving or from eating some foods 2 a: habitual abstaining from intoxicating beverages b: abstention from sexual intercourse
Chastity is the best word to use if you want to indicate abstention from sexual intercourse.

Traditionally, abstinence was just the avoidance of something--sex, booze, french fries... Celibacy is a commitment to avoid sex or sexually related stuff. Chastity is the avoidance of unlawful or lascivious sexual intercourse. A married person can be chaste by having sex only within the marriage and usually only for purposes of love and comfort, as opposed to all-out wall-shaking hedonistic pleasure.
A monk took a vow of celibacy to abstain from sex (and other fleshly or material pleasures), not because sex was bad, but because Paul knew his Plato, and "The Symposium," and believed that a virtuous person lived a higher life by focusing on the spirit rather than the flesh. Later Christians, who did not have Paul's classical education, thought he just meant sex was sinful.
A married person is chaste if they only have sex within their marriage.
A virgin never has sex. So a virgin is chaste, celibate, and abstinent, but a chaste person does not have to be celibate or abstinent, and a celibate person does not have to be a virgin.
