Cuts down on the greasiness and makes it so flavorful.
A bit a work but I did it for my parents who hated duck and they loved it! Search for "good eats roast duck" on Youtube.
They key is the steaming; it renders the skin and makes a wonderful stock...

and then searing in the skillet...wow...
It was a lot of work, made a mess and...my mom was so happy. She was in the last stages of MS and just getting her excited about anything and eating was so worth it...
