Be aware: "Beef Fries" are not what they seem!
I went to the store today to look for andouille sausage that I needed to make "Louisianan Rice"--like Spanish rice but with shrimp and andouille sausage instead of German sausage like I use in my Spanish rice. Anyway, I looked in the "variety meats" case that normally is full of cow heads, and found a big display of Beef Fries. In Spanish, "Huevos de Toros."

Yup, bull nuts.

And in case you're wondering, Louisianan Rice contains:

1 lb bag frozen precooked shrimp
1 onion
2 tablespoons butter
Big can of tomato sauce
4 teaspoons "LSU Tiger Dust" Cajun seasoning I got in Breaux Bridge, LA, over a 34-hour break I took last weekend
1 cup brown rice
1 cup white rice

Saute onion in butter. Throw in shrimp and cook until shrimp is thawed out. Drain, because it's gonna be full of water at this point. Add tomato sauce and seasoning.

Make rice. Mix tomato sauce part and rice part together. Heat until warm. Serve.

The only problem is, those little guys are the size of pit bulls and already capable of killing things.

9. Contents of Tiger Dust
Salt, red pepper, garlic, onion, black pepper, paprika, white pepper.

It's got a nice flavor to it, unlike the so-called Cajun spices not made in Louisiana. This is made in Lake Charles.

7. More accurately, these are calf 'fries'
the fried part is what is done with them. They are tasty indeed. Male calves have them removed to become steers to become big macs. Generally served with an ice cold domestic beer.

I could have used andouille sausage or boudin. Neither is available here.
