Fried oyster-mushroom po-boy sandwiches |

Breaded, fried fresh oyster mushrooms gathered the day before. Roasted Hatch chili peppers. Lettuce, tomato, onion. Vegan mayo. Capers. A little fresh-ground horseradish. All on a warm baguette. :9
That was dinner last night, and I am still full!

Never had a po'boy, often wonder what I'm missing.
When I was living in the South - the Carolinas and Georgia - I don't think I ever had a bad meal. I learned a lot about good cooking, too.
