Made my very first ever Beef Bourgoignon today |
|
I'll let you know tomorrow how it turned out!
I followed Julia Child's recipe in her famous cookbook.
And followed it almost exactly to the letter - had one minor fuck up in how I cut some of the beef (too small), but nothing that should affect the flavor.
I'll finish it up tomorrow afternoon with the mushrooms and reduction of sauce.
Sadly, no time today to eat it.

I made it once about 40 years ago from Rombauer's Joy and I thought it was way too much work for the result. Of course, I'm a much better cook now but I don't think I'd ever try that particular recipe again. Let us know how Julia's turns out.

3. I'd say it took me less than an hour to prep it and get it in the oven. |
|
It's not as easy as randomly throwing shit in a crockpot and letting it go to town; but then, it likely tastes a lot better for taking the time to brown the meat and the onions. It's the browning that takes the extra time - not only is it extra cooking time just on its own (let's say it adds time X to the total prep time), but I had to do mine in four batches because you can't just toss all the meat in and brown it at once - it'll steam instead. So it took prep time plus 4X time for the cooking of the meat.
Once that's done, though, it's just toss it in the oven - and then when it's done, there's some more fiddling with reducing the sauce down, but that's pretty much a "set it on the stove and cook it down and walk away and do something else" process.

4. I use Michael Field's recipe. |
|
I'll look up Julia's and see how it differs, if it does. I always have great luck with it, and diners swoon. :-) It's a great dish for entertaining.

6. Yeah, but how did it taste? Was it worth the effort? |
|
An hour in the kitchen is nothing to me. Sometimes when I'm baking bread, I will spend most of the day there but the bread is usually of the knock your socks off variety. I don't mind the prep time if my taste buds get blown away but if the recipe is just O.K. I feel like the time has been wasted. Life is too short to cook bland food.
