Cooks. What is a good substitute for Maderia? |

I live in downtown San Jose, California. We have so many ethnic markets that I'm pretty sure I can get anything you can think of. We have everything! I don't doubt that if I worked hard enough, I could get dog. A Vietnamese co-worker told me how much he loves dog. I don't doubt that, much like Cuban Cigars, if you know the right people, you can get both Cuban Cigars (which I can get) and dog. What I can't seem to get is Maderia wine. I have looked everywhere!
All my life I have come upon recipes that call for Maderia. I have always just substituted Cab. but I am now faced with a winter Solstice Goose recipe that calls for Maderia, which I can't find so what is a good substitute?

Not a guess in my case. You're right. Really he should be using Madiera if that's what the recipe calls for but any red-or-tawny fortified wine will do...not a regular table or cooking red.
Sherry? Sure. Port? Great. Marsala? Awesome.
Cabernet? No.

You could probably get it shipped from San Francisco. But I'm really surprised that you can't find in where you are.
Marsala or Sherry could be good substitutes.
We went to Madeira several years ago. Great place with mediocre food and spectacular scenery.

Very similar. I lived in Andalucia's sherry country as a kid. My wife has deep Madeiran roots, and so due to our mutual interests, our household has enjoyed both kinds of wine over the years.
Do you have a BevMo in your area? They carry Madeira, and good sherries, such as the Osborne label.
