Heads Up! Robert Burns Night 1-25! Enjoy Haggis!!!!

Calendar for January 25th, 2010

Burns Night

The birthday of Scotland’s most famous poet, Robert Burns (1759-1796), has become an occasion for Scots all over the world to gather together in his honor. A Burns Night supper usually includes haggis, a traditional dish of the heart, lungs, and liver of a sheep or calf minced with suet, onions, oatmeal, and seasonings. Burns’s words "Hail Great Chieftan o' the Puddin-race!" greets the dish’s entry into the room. Men wear kilts and women their tartan sashes, and the evening’s celebration includes reading Burns’s poems and singing his songs, ending with one of his most famous, "Auld Lang Syne."

I wonder what the Scotch consumption is on this night? Must be pretty high, considering haggis is the Main Course...:D

1. a good scothish ale will do to wash it down, also.
never had the haggis, but sure have had a few scottish ales named after the bard.

Recipe origin: United Kingdom

Ingredients
1 sheep's stomach
1 sheep heart
1 sheep liver
½ pound suet, fresh (kidney fat is preferred)
¾ cup oatmeal
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon cayenne
½ teaspoon nutmeg
¾ cup stock

Procedure
Wash stomach; rub with salt and rinse.
Remove membranes and excess fat.
Soak in cold salted water.
Turn stomach inside out.
Boil the heart and liver in water, and simmer for 30 minutes.
Chop the heart and grate the liver.
Toast the oatmeal until golden brown.
Combine all ingredients and pack into the stomach, leaving enough room for the oatmeal to expand.
Press excess air out of the stomach and sew it up.
Simmer for three hours in a pot of water, pricking small holes in the stomach so that it doesn't explode.

Serve on a hot platter.

6. I had no idea haggis was THAT gross looking. No wonder Robert the Bruce
got so pissed off at the English. That's what they left them to eat!
