Funk-AY beer! By that I mean the Brettnomayces have done their thing, and this has that farmhouse funk, which works very well in a Saison like this.

Much cheaper than Orval, this one has some great stuff in it. Notes of nuts (the vegetable kind), horseblanket and olives.

2. This is a 'wild ale'

Which means it uses Brettnomayaces. I may have spelled that wrong.

Anyway, this is the yeast that is floating around in the air right now. Hence the name 'wild' yeast.

As a result, it gives a beer a distinct 'horseblanket' flavor that tastes like, well, I can only describe it as such. Bretts (as that strain is called) also impart a sour flavor.

So this is not your ordinary beer.

But, if you can handle the wildness, it makes for a very nice tasting beer, that works. You just have to open your olfactory senses up to this smell (because that's what it is really.)

Some folks it takes a while - and I don't disparage you if you don't like it at first. I mean come on, some have described this smell as that of 'rotten meat.'

But it is safe, and this specific strain of yeast has never caused any problems for the human digestive system.
