What's for dinner tonight?
Here, beef enchilada.

Ok, ok, I admit it. Hamburger Helper beef enchilada. :-)
(I add a 16 ounce package of shredded colby/monterey jack cheese to it.)

1. My intrepid son, shunning written recipes and cookbooks..
fashioned "meat"balls of eggplant, chickpeas & breadcrumbs
fried them in olive oil
and served them over spagetti

with a salad that had, besides tomato, onion & cucumber..spinach, feta cheese & Kalamata olives!

Now keep in mind this is a kid who never cooked a thing until he went away to school. I didn't dare stray from written instructions for years.

p.s. . . . It was pretty good!

It was absolutely heavenly, far better than your plain old ground chuck or ground sirloin burger. I'm not going back.

11. kind of a cheap, on-the-fly b-day dinner for the husband
mixed steaks (freezer surprize, he gets the ribeye, squids and I will divy up a sirloin and some other odds and ends) grilled in the fireplace (too dam cold outside and it MIGHT rain again)

a few odd chilis from the veg drawer, think there is one anahiem and a couple jalepenos, plus some hot skinny green thing

fresh broccoli, butter

baked potatoes

romaine and tomato salad with homemade ranch dressing

still trying to decide if I need to make some homemade mac and cheese (only have med cheddar)

pineapple upside down shortbread with whipped cream

cheap "beer," iced tea

18. Tonight was Seafood Fun Si (glass noodles and seafood)

I have lately become wild about Fun si (pronouced FunShe) which are glass noodles. These are clear noodles, which I have seen in Thai, Korean (Chap Chae), Japanese(harusame),Vietnamese and Chinese Cooking. The Noodles dish I had tonight was Chinese Seafood Fun si, which seemed to have much more squid then fish, shrimp or scallop.
