What is "baking mix"?

I was in the store buying ingredients for this recipe and realized I have no idea what baking mix is.

Day Six Easy Dinner Recipe

IRISH CHICKEN AND DUMPLINGS

Irish Chicken and Dumplings Ingredients:

2 (10.75 ounce) cans condensed cream of chicken soup
3 cups water
1 cup chopped celery
2 onions, quartered
1 teaspoon salt
½ teaspoon poultry seasoning
½ teaspoon ground black pepper
4 skinless, boneless chicken breast halves
5 carrots, sliced
1 (10 ounce) package frozen green peas
4 potatoes, quartered
3 cups baking mix
1 ⅓ cups milk

Directions:

1. In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. 2. Cover and cook over low heat about 1 ½ hours.
3. Add potatoes and carrots; cover and cook another 30 minutes.
4. Remove chicken from pot, shred it, and return to pot. Add peas and cook only 5 minutes longer.
5. Add dumplings.

To make dumplings:

1. Mix baking mix and milk until a soft dough forms.
2. Drop by tablespoonfuls onto BOILING stew.
3. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.

3. No need to buy expensive commercial baking mixes

It is very easy to make on your own. My recipe is as follows:

500 grams all-purpose flour(4 cups)
1 cup powdered milk
1 cup lard
1 Tbs baking powder
1 1/2 tsp salt

I always use buttermilk with this recipe. If you aren't using buttermilk, add 1 tsp cream of tartar to the mix.

I put all the ingredients in my food processor except for the lard. I drop the lard in 1 tbs at a time with the processor on continuously until it's all in. If you don't have a food processor, you can use a regular mixer. You can also use shortening instead of lard.

Store in an airtight container and use within a few months.

Edit: Commercial baking mixes use powdered eggs. Use 1 beaten egg for every 2 cups of the mixture in your recipe unless you are making biscuits. In that case you can leave the eggs out for flakier biscuits. You'll also need to shake the mixture before use.

5. It's up to you. I would use a yellow cake mix.
corn bread, banana bread, muffin mix. Make them out of whatever baking mix you want.
And watch for those surprised looks on the family's faces.
