What's your stress-relieving / trauma-soothing food?

For some, it's ice cream. For others, it's red meat. For yet others it's pizza.

Mine is sushi. Specifically, going into an all-you-can-eat sushi joint and letting it rip. Hot Philadelphia rolls. Mmmmm. Salmon, cream cheese and chives inside the roll, then you CHICKEN FRY the whole thing. Unholy goodness.

On edit, in a pinch you can leave out the cream, potato, and leeks and just have wonderful bacon.

2. Rice.
Sometimes, just with a little butter and salt. Within the past three years, with olive oil. And with stir fry veggies. Sometimes with chicken. Or with red beans.

And lately, I do the rice, red beans and yellow corn. Looks real nice. I spice the rice dishes with any combo of cayenne, curry, black pepper, garlic, ginger and oregano.

If I'm stir-frying the veggies or chicken, then I always use a good splash of beer in there. It really pulls the whole thing together.

But plenty of times, it's just the rice.

12. No matter how many times I've tried, I just can't get into brown rice
I bought white rice today...more for the fact that it's cheap and filling (a 2-lb bag for $1.49 at lucky) than it's a comfort food, and I have a National rice cooker, so it's a quick and easy breakfast / lunch / dinner (sometimes it's all a matter of filling an empty stomach, rather than creating inspiring cuisine). Plus I tend to work while eating / eat while working, so I hit the "start" button, get back to work, dish it up when I hear the beep...

24. Have you tried it for a sustained period of time? We were forced to switch to brown rice
when my husband was diagnosed with diabetes. He's Asian, so rice was a pretty big deal for him. We both felt like you did, like it was going to be something we'd never get on board with eating. Then, after a couple of weeks, it started getting to where we liked it just fine. Now, four years later, I absolutely prefer it. I've tried white rice a couple of times and it doesn't taste good to me anymore. I even make risotto with it. It takes FOREVER but it's so tasty.

26. The two things that keep me from doing that...
1). I'm not an expert on brown rice "freshness" but I have read about the bran layer "going bad," and the other day I opened a container that I keep tightly sealed, in the cupboard, away from heat and light, and it just smelled RANCID (and the rice was not that old).

I've also purchased "designer rice"...those $7 plastic cannisters...but the issue there is that these days, I'm not going to spend $7 on ANYTHING that I do not L-O-V-E...and I don;t love brown rice.

2). I know the "chewiness" of the bran layer is a selling point for some, but I hate it. And if I cook the rice to the point where the bran layer is softened past the point of chewiness, it just tastes mushy to me.

There are a lot of other ways in life that I strive to make "healthy choices"...I'm afraid brown rice is never gonna be one of them.

good old mac and cheese is good enough on its own.

But I used to be what was called an "outdoor adventure leader" at the college I went to and we had some pretty severe winter camping trips.

So one of my fellow "leaders" used to make this campfire mac and cheese. She sauteed onions and garlic and whatever other veggie might be around, but the garlic and onion were the easiest to pack up a mountain on skis, so usually that is all we had. Then we threw the mac and cheese mix in and a bunch of other cheeses (because we were young and burning a lot of calories lol) and mushed that all up together and damn, but it was good.

Of course, now I am not cross country skiing up a mountain...but I still make it when I need it.

And I am not nearly as skinny as I used to be, because I still love that recipe. I recommend mozzarella, cheddar and any other cheese you want to throw in. Since I am not on a mountain anymore, I sometimes put some parmesan and bread crumb mixture on top and bake the whole mess in the oven and then you have some SERIOUS comfort food.

Yum.

stir until blended stir in 1/4 tsp. vanilla and ad 1 cup confectioner's sugar.

This is for when there are no sweet snacks in the house.

the first time I felt like eating after my recent surgery, the only thing that sounded good was my mom's macaroni and cheese. I called her and she was thrilled to make it and bring it right over.

41. With me, it depends on how much time I have.
It only takes me a half hour to throw together overstacked BLTs and some sort of fried tater product. If it's the weekend, it might be pizza (I make my own sauce from scratch) or kickass fajitas. The thing with the fajitas is you choose the spiciness to suit. The colors, the smell, the flavor. And all in all, still pretty damn good for you.
