8. Mmmm! I was just going to ask about the round leaf
that sometimes comes with sushi, along with pickled ginger and wasabi. I looked it up- Shiso leaf, or beefsteak plant.
I miss sushi and sashimi, but we're living farther from the ocean and the seafood around here doesn't seem as fresh.

9. What the HELL do you use to "hand-letter" a sheet of nori???
I've been making sushi for about 20 years - minus the fish. The word "sushi" actually means something like "vinegar rice", not "raw fish". There are countless other things to put in it. Try avocado, cucumber, cooked egg, cheese, red pepper (for color - any pepper will do), carrot sticks (cut thin), chives (fresh, uncut), spring onion, broccoli (stems cut thin, heads chopped and scattered), any kind of mushroom (enoki is commonly used, but shitake, portobello, hen of the woods, and oyster are all good), pickled ginger, pickled daikon radish (the screaming yellow thing), spinach, red radish, etc.

You can also spread a little tahini on the rice before rolling. Do NOT forget the wasabi!!! The powdered stuff in a can (with the old-style press-in lid) lasts freakin' forever.

And for Jiminy Crickets, get a good pair of chop sticks!
