What was for dinner tonight? I need ideas. I had seafood caserole with peas.
From the caterer. I have some rice left over.

1. Boneless chicken breast dusted with smoked paprika and broiled...

...red beans and rice seasoned with sodium-free chicken broth and balsamic
vinegar and about a tablespoon or so of Bacon Honey French dressing and
covered with wilted angel hair cole slaw (no dressing).

Focusing more on no/low sodium meals now and so far have managed to stay
pretty tasty.

3. Woah, never heard of sodium-free chicken broth.
I'm trying to cut down on my sodium too. Actually doing a pretty good job, been at it a while. Try to keep it under 1500 mg/g/whatever it is a day. I've found a lot of stuff out there. Your dinner sounds great (except for the beans, I hate beans and peas - have since childhood).

I've taken a few recepies off the net and substituted things like onion powder in the place of salt. Not doing too badly. There are even some pre-made, low-sodium meals out there. Healthy Choice frozen dinners come to mind. Couple of varieties of Lean Pockets too.

7. Wyler's makes it... not many stores carry it but Fry's in our area does.

The only chicken ingredient is about 5 or 6 down the list (chicken fat).
Soy and wheat gluten protein and a lot of powdered spices -- I think
it's pretty tasty.

About $3 for a 2.62 oz glass jar, but it stretches pretty far. On their
shelves, it's right among the other chicken/beef bouillon powders).
.
There are about 2 gms of carbs in a "serving" (maltodextrin and sugar
being the first two ingredients) but 0% sodium and 0% fat.

Big on flavor... low on impact.

2. my plate:
a little pile of loose cooked hamburger with onions, two big spoonfuls of leftover pinto bean "soup" and a big pile of fresh chopped "salsa" consisting of homegrown tomatoes, raw green chilis, onions, and serano chilis. plus a stack of steamed corn tortillas YUM

I was too lazy/hungry to get some fresh cilantro that has resprouted out in my "herb garden" but that would have been good too.

6. Shish Kebabs,fresh grilled corn, sauteed msuhrooms,cajun cole slaw...
and strawberry shortcake. Yummylicious. Beef kabobs with red and green bells peppers, fresh pineapple, red onions. Might be my favorite meal ever.

10. oven-barbequed pork country ribs, smashed redskins...
...green salad and a home-grown rhubarb pie.

Tomorrow: Brats simmered in sauerkraut and white wine, corn on the cob, grilled rye toast, and radish salad with mint and citrus.

Saturday for neighborhood BBQ potluck: Granny Smith pie, Coconut cream pie, big bowl of potato salad.
